Does the gasser t-stat have the two barbells in the outer ring like the cummins t-stat? Having your coolant bounce from 180-210 or even 220 is not a concern. It always comes down to 190 right, when not running up hills so no big deal. I found that using the air-con really helps to activate the monster fan blades. Heavy duty cooling!

What most forget about is the Radiator cap as well. If you are having bad fluxs as stated above do this first .I bet money that it won't hold pressure at 15 to 16 psi.
